He first began importing natural wine into Mexico in 2016 with his brand Loofok, and later went on to open Loup Bar in Colonia Roma in 2017. “When I moved here, almost all wine sold in Mexico City was conventional, but now that’s not the case,” says Rousset. “Our scene has evolved immensely in the last six years and will continue to do so given most new restaurants are focused on product quality, for which natural wine is an obvious fit.”
