Even tiny minor things, for example Koreans like to drink when they are together and Chinese play card games (Koreans dont play card games very often). That’s a good question. I’d say it’s largely about behavior and intent. Cultural appreciation is about experiencing and learning about a culture. While cultural appreciation gives credit to and does not take away from the culture, cultural appropriation does harm to the culture’s autonomy, image, and attempts at self-representation. If you like eating Mexican food and you buy it from a Mexican-owned restaurant or business, that’s cultural appreciation. If you go to Mexico and learn about the food and the traditions and the styles of cooking there, that’s cultural appreciation. If you cook a Mexican meal, that’s still appreciation— as long as you’re not trying to pretend to be Mexican. If you open up a Mexican-style restaurant with the decor, and call it Senor ______’s, then you might be entering appropriation territory. If you open up a restaurant that has some Mexican or Mexican-style dishes, but otherwise is not trying to appear “Mexican”, I’d say that is cultural appreciation.

So, it’s all about what you’re trying to do and say in your use of the cultural component, and how you represent the culture (and if it’s not your culture, you really shouldn’t be representing it, but instead allowing the natives of the culture to represent themselves).
